Indulge in the scrumptious delight of the Potbelly Sugar Cookie Recipe with these easy-to-follow steps. These cookies are irresistibly sweet and perfect for any occasion.

Ingredients

Instructions

  1. Preheat your oven to 375°F before starting to create this delicious sugar cookie recipe.
  2. Then, in a microwave-safe bowl, melt your butter in the microwave until it is half melted. I used 20-second increments until I got to the desired consistency. (If you want to keep this a one-bowl recipe, use your large mixing bowl!)
  3. In your large mixing bowl, cream together your half-melted butter and 1-1/2 cups granulated sugar. Because the butter is so soft, I didn’t need to use an electric mixer, a rubber spatula sufficed.
  4. Next, add the egg and vanilla extract and mix until just combined.
  5. Add about half of the flour and sprinkle with the baking soda and baking powder. I make sure to distribute the baking soda and powder evenly throughout the cookie dough.
  6. Stir the flour mixture until it is just blended, then add the remaining flour and stir until fully combined. The dough should appear light and fluffy.
  7. In a small bowl, place roughly 1/2 cup of sugar to roll your balls in. Make 1-1/2′′ to 2′′ dough balls with a cookie scooper or spoon. Roll the cookie dough balls in the sugar and place them on the baking sheet. Allow about 2″ between cookies to allow the cookies to spread.
  8. Bake for 8-9 minutes, or until they puff up like marshmallows. Remove the cookies from the oven and cool for 8-9 minutes on the pan before removing them and placing them on a cooling rack. They will shrink as they cool down.
  9. Let the cookies cool for about 45 minutes to an hour to allow these potbelly sugar cookies to be fully set.

Notes

  • Allow the cookies to cool for 45 minutes to an hour to allow the potbelly sugar cookies to completely set.
