  1. Make a seasoning mixture. Cut the chicken breasts into 14-1/2″ pieces. Cut celery, carrots, onion, and green pepper into dice. Cut the bottom white part up to the bright green stalk of the green onion and slice. Keep the green tops aside for garnish.
  2. Set the Ninja Foodi on high saute and add butter. Allow to heat until very hot, but avoid burning the butter. Season the chicken breasts with 1 tablespoon of the seasoning mix. Add a few chicken slices at a time and brown on both sides, which should just take a minute or so on each side. Take out and place in a bowl.
  3. Add ½ cup flour to the oil in the Ninja Foodi to make the roux. Reduce the heat to medium and stir regularly. Allow the roux to cook and deepen until it resembles peanut butter. If your roux is too thin, add extra flour. The finished consistency should be slightly thinner than tomato paste. This could take between 20 and 25 minutes. You may need to turn the heat up and then back down. To avoid burning, stir often. Remove as much roux as possible from the inner pot and set aside for later use.
  4. Set the Ninja Foodi on high saute and add 2 tablespoons of butter to the inner pot. Cook for a few minutes after adding the onion, green pepper, celery, carrots, and salt. Add in the garlic. Add 1 Tbsp of Cajun Seasoning. Cook for an additional 2-3 minutes.
  5. The Andouille sausage should be cut on the bias. Sauté the sausage for about a minute in the inner pot.
  6. Add in 4 cups of chicken broth or stock. Scrape the pan to remove any brown bits from the bottom.
  7. Add in white rice and stir. Add Chicken slices. Add the bottoms of the green onions. Place reserved roux on top and DO NOT STIR. Put on the pressure lid and set the pressure to high for one minute.
  8. Drain the peeled shrimp and season with the remaining Cajun seasoning combination. When the one-minute timer ends, instantly release the pressure. Stir. Add in the shrimp and fold them into the rice mixture. Close the Tender Crisp Lid and set aside for 5-10 minutes to allow the sauce to thicken and the shrimp to cook.
  9. Slice the green onions on the bias and use them for garnish.
